In future, more plant-based proteins rather than animal proteins should – and must – not only ensure the world’s food supply, but also enable humanity’s survival in the face of global warming.
Innovative solutions are being presented at scientific conferences, and start-ups are working on scalable production processes for alternatives to meat and fish products. Whilst the first attempts were rather unconvincing and did not appeal to most consumers’ tastes, this has already changed with burger patties from companies such as Beyond Meat. Today, veggie burgers are naturally part of the standard menu at major fast-food chains and are on a par with minced meat patties in terms of both taste and texture. Tofu, seitan and mushroom products are no longer niche products. Thanks to Asian cuisine, fermented vegetables such as kimchi have also become popular in Europe, and some people may even be rediscovering sauerkraut and Rhineland-style chopped green beans. Advances in fermentation technology are enabling the production of particularly valuable ingredients.
The Italian ‘Affidia Journal’ has covered this topic in great depth in the past and successfully organises the ‘Food Revolution’ symposium, which explores all facets of future nutrition. The founder, Dr Maurizio Paleologo-Oriundi, wanted to know where innovation and production of plant-based protein alternatives are based in Europe. Most companies are located where demand for these products is highest. A certain north-south divide is evident here. The study encourages the initiators to delve a little deeper now. To this end, the authors are seeking further sparring partners and continued exchange with pioneers in the field of plant-based protein production.
