Food safety remains a strategic pillar for the industry, where innovation and consumer confidence are essential. On 3rd March, Madrid hosted the 23rd AECOC Congress on Food Safety and Quality, an event that brought together professionals from across the food supply chain to discuss the sector’s main challenges.

 

During the conference, the key issues that are shaping the evolution of food safety in an increasingly demanding and globalised environment were discussed. One of the main themes was the importance of science in decision-making processes, emphasising the need for more accurate and predictive risk assessment models.In this context, Listeria formed the central theme of several of the presentations and was the main focus of the event. As one of the most critical microbiological risks for the food industry, the session emphasised the importance of implementing data-driven preventive strategies and strengthening the validation of product shelf life and storage conditions to minimise risk.

 

The shift in focus from a reactive, control-based model to a more proactive risk management approach was also emphasised, with aspects such as import controls and allergen management becoming particularly important. Attendees were particularly interested in this last point, as it presented a new approach based on setting action limits for the main allergens to help implement precautionary labelling based on actual risk. Another key topic was the role of consumers as active participants in the food safety system. In this regard, the importance of improving communication and training to promote safe practices at home was emphasised.

 

The conference also addressed the challenges associated with innovation and sustainability. It was emphasised that any progress must be underpinned by solid science to guarantee food safety. Similarly, strengthening collaboration between businesses, the government and the scientific community was identified as a vital step in overcoming current challenges.In short, the meeting concluded that effective risk management, particularly with regard to Listeria, together with the integration of science, innovation and cooperation, is essential for strengthening consumer confidence and ensuring food safety throughout the supply chain.
