Am 30. Juli 2026 trat die Verordnung (EU) 2026/1825 in Kraft. Damit werden die Grenzwerte für 3-Monochlorpropan-1,2-diol (3-MCPD), 3-MCPD-Fettsäureester und Glycidylfettsäureester (GE) geändert.

 

Die wichtigsten Änderungen sind: Höchstgehalte für Babynahrung/verarbeitete Getreideerzeugnisse für Säuglinge und Kleinkinder; strengere Höchstgehalte für Öle und Fette, die zur Herstellung dieser Produkte verwendet werden; sowie Höchstgehalte für zusammengesetzte Lebensmittel, die zugesetzte pflanzliche Öle und Fette enthalten.

 

3-MCPD (3-Monochlorpropan-1,2-diol) entsteht vor allem bei der Hochtemperaturraffination von pflanzlichen Ölen und Fetten bei Temperaturen um 200 °C. Ein erheblicher Teil davon liegt nicht als freies 3-MCPD, sondern als Fettsäureester vor. Diese Ester können im Verdauungstrakt wieder zu 3-MCPD hydrolysiert werden. 3-MCPD wird mit Nierenschädigungen in Verbindung gebracht und hat eine krebserzeugende Wirkung. Außerdem kann sie die männliche Reproduktionsfähigkeit negativ beeinflussen.

 

Noch gefährlicher sind Glycidylester. Bei der Verdauung werden die Ester weitgehend zu Glycidol hydrolysiert. Glycidol besitzt eine sehr reaktive Epoxidgruppe. Diese kann mit DNA und anderen biologischen Molekülen reagieren. Die EFSA stuft Glycidol deshalb als genotoxisch und kanzerogen ein.


Über Säuglingsnahrung können Säuglinge relativ große Mengen pflanzlicher Fette aufnehmen. Gleichzeitig ist sein Körpergewicht sehr niedrig. Dadurch kann die Aufnahme von GE bzw. 3-MCPD-Estern pro Kilogramm Körpergewicht erheblich höher sein als bei einem durchschnittlichen Erwachsenen. Die EFSA sah deshalb gerade bei Säuglingen und Kleinkindern einen besonderen Anlass zur Risikoreduzierung.
